Texas Style Oven BBQ Brisket

Ingredients:

  • 3 tablespoons chili powder
  • 1 1/2 tablespoons salt
  • 1 tablespoon ground black pepper
  • 1 tablespoon sugar
  • 2 teaspoons dry mustard
  • 2 teaspoons smoked paprika
  • 1 teaspoon granulated garlic
  • 1 teaspoon onion powder
  • 1 teaspoon cayenne
  • 2 bay leaves, crushed
  • 4 pounds beef brisket, trimmed
  • 6 cloves garlic, smashed
  • 1 onion, quartered
  • 1 1/2 cups beef or chicken stock

Method:

1. Preheat the oven to 350 degrees. Make a dry rub by combining chili powder, salt, pepper, sugar, mustard, paprika, granulated garlic, onion powder, cayenne and crushed bay leaves in a medium bowl. Season the brisket on both sides with the rub. Allow meat to rest at room temperature with the rub for 30 minutes before cooking. Place the meat in a roasting pan and cook, uncovered, for 1 hour.

2. Lower the oven to 300 degrees. Remove the roasting pan from the oven and scatter the garlic and onions around the meat. Add the stock and enough water reach about 1/2 inch deep in the roasting pan. Cover the pan tightly with aluminum foil and return the meat to the oven and continue to cook until fork- tender, about 3 hours more.

3. Remove the brisket and let rest for 15-20 minutes. Slice the meat against the grain and serve with your favorite Texas BBQ sauce and cornbread!
