Grilled Vermont Cheddar and Pear

Ingredients:

  • 8 slices country-style white or wheat bread
  • 3/4 pound Vermont Cheddar, sliced
  • 1 ripe pear, such as Bosc or D'Anjou, thinly sliced
  • 3 tablespoons unsalted butter
  • 1 sprig rosemary, roughly chopped
  • Honey mustard, optional

Method:

1. Heat griddle or large non-stick skillet over medium-low heat.

2. Assemble sandwich: Place slices of cheddar and pears atop 4 slices of bread. Place the remaining bread on top and spread the top of the bread with 1/2 the butter. Place the sandwiches on the skillet buttered-side down and scatter the rosemary. Spread the remaining butter on the other side of the sandwich. Cook until cheese is slightly melted and bread is browned, about 3 minutes. Flip the sandwich and continue to cook until cheese is thoroughly melted and sandwich is golden brown, about 3 minutes more. Cut the sandwiches in half and serve with honey mustard, if desired.
