Cuban Sandwiches

Ingredients:

  • 4 soft hoagie rolls
  • 3 tablespoons yellow mustard
  • 2 tablespoons mayonnaise
  • 1/3 lb. baked ham, thinly sliced
  • 1/3 lb. pressed roasted pork, thinly sliced
  • 1/3 lb. fresh turkey breast, thinly sliced
  • 1/4 lb. Swiss cheese, thinly sliced
  • 2 dill pickles, thinly sliced
  • 2 tablespoon unsalted butter, room temperature
  • Plantain chips, optional

Method:

1. Slice the bread horizontally in half, leaving 1 edge intact. Lay the bread open and spread evenly with the mustard and mayonnaise. Divide the ingredients evenly starting with the ham followed by the pork, turkey, cheese, and dill pickles. Close the sandwiches, pressing down gently to seal.

2. Heat a flat grill or a large non-stick skillet over medium high heat. Melt half the butter in the pan and cook the sandwiches on one side until golden, about 5 minutes, pressing down firmly with a flat spatula. Add the remaining butter to the skillet, turn the sandwiches and continue to cook the sandwiches until the cheese is melted and the bread is flat and browned, approximately 5 minutes per side. Let cool 2 minutes before cutting in half. Serve sandwiches warm with plantain chips on the side.
