Cheesy Bacon Brat Burgers with Spicy Kraut

Ingredients:

  • 1 tablespoon freshly ground white pepper
  • 1 teaspoons kosher salt
  • 1 teaspoon rubbed sage
  • 1 teaspoon paprika
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon sugar
  • 1 1/2 pounds ground pork
  • 1/2 cup shredded sharp yellow cheddar
  • 1 cup sauerkraut, drained
  • 1/4 cup pickled jalapeños, plus 1 tablespoon of the juice
  • 1 tablespoon vegetable oil
  • 4 slices sharp yellow cheddar cheese
  • 4 slices thick cut bacon, cut in half and cooked to package directions
  • Large seeded hamburger buns, toasted
  • Ketchup & mustard, optional

Method:

1. Combine the white pepper, salt, sage, paprika, allspice and sugar together in a large bowl. Add the pork and cheddar. Using your hands, mix well until the spices, meat and cheese are well combined. Form into 4 equal patties. Refrigerate for 30 minutes.

2. Meanwhile combine the sauerkraut with the pickled jalapenos and juice in a medium pot. Cook over medium low heat until warm, about 5 minutes.

3. Heat the oil in a large non-stick skillet over medium high heat. Cook burger patties until golden brown, turning once, about 5 minutes per side. Add a slice of cheese on top of each patty. Cover and cook until the cheese melts, about 1 minute more.

To Assemble:

Place the patties on a toasted bun. Top each with crisp bacon and sauerkraut. Serve with ketchup or mustard, optional.
